Cardamom roasted nut slab

Cardamom Cacao Caramelised Roasted Nut Slab

This is probably one of the most requested recipes to make, as everyone loves roasted nuts, and the honey caramelised taste combined with the flavour of cardamom chocolate, it has everyone drooling for more.

Line a tray with greaseproof paper. In a large frypan over medium heat, dry roast the nuts until slightly toasted. Do not leave them unattended – they can burn quickly.

Turn the heat down to low, then slowly add honey bit by bit, stirring through until all nuts are coated and start to bubble and caramelise ( just be careful the pan isn’t too hot as they will scorch quickly).

Pour out nut mix evenly into your tray, rearranging quickly to spread out into an even thickness. When this cools it becomes very sticky and hard to move around.
In a double boiler over low heat or using a Thermomix, melt the cacao butter and coconut oil together (TM heat 50, speed 2, 5 minutes), then add in all other ingredients, mixing well for a few minutes.

Drizzle chocolate as evenly as possible over the nuts and refrigerate for one hour or until set.

Remove whole slab from tray onto a board and chunk into bits for serving.

4 cups (520g) assorted nuts (your choice, eg macadamia, pistachio, almond, cashew, pecan)
6 tbsp raw honey
1.5 cups (180g) cacao butter
1/3 cup (60g) coconut oil
1/3 cup (90g) maple syrup
1.5 cups (150g) organic cacao powder
Pinch of pink salt
3-4 drops food-grade cardamom essential oil
1 tsp maca powder
